Ingredients for Pressure Cooker Italian Wedding Soup
- Unsalted Butter
- Olive Oil
- Frozen Seasoning Blend – I used Walmart’s Great Value Brand. You can substitute any brand that has onions and bell peppers.
- Frozen Sliced Carrots – no peeling or chopping required
- Unsalted Chicken Stock – I like Pacific Foods Organic
- Frozen Turkey Meatballs – Look for the lowest sodium brand. Target’s Good & Gather is the lowest I’ve found so far.
- Cream of Mushroom Soup – Campbell’s Healthy Request
- Ditalini pasta or any small pasta will work
- Oregano and Black Pepper
- Baby Spinach – fresh works best

Ingredients
- 1 tablespoon Unsalted Butter
- 1 tablespoon Olive Oil
- 1 (10-ounce) package Frozen Seasoning Blend such as Great Value
- 1 (12-ounce) package Frozen Sliced Carrots
- 2 (32-ounce) cartons Unsalted Chicken Stock
- 1 (20-ounce) bag Frozen Turkey Meatballs such as Good & Gather
- 1 (10½-ounce) can Less Sodium Cream of Mushroom Soup such as Campbell's Heart Healthy
- ½ cup Ditallini Pasta
- ½ teaspoon Dried Oregano
- ¼ teaspoon Black Pepper
- 1 (10-ounce) package Baby Spinach
Instructions
- Select saute setting on a 6-quart pressure cooker. Add butter and oil. Once the butter melts, add the carrots and the seasoning blend. Cook and stir until tender, about 3-4 minutes. Press cancel. Stir in stock, meatballs, soup, pasta, oregano, and pepper.
- Lock the lid and close the pressure release valve. Pressure-cook on HIGH for 10 minutes. Allow pressure to naturally release. Stir in the spinach until wilted.
- Serving size is just under 2 cups.
