Ingredients
- 1½ pounds Beef Stew Meat cut in 1-inch pieces
- 1 tablespoon Grapeseed Oil
- 1 (14.5-ounce) can Unsalted Beef Broth
- 1 (28-ounce) can No Salt Added Fire Roasted Diced Tomatoes undrained
- 16 ounces Baby Red Potatoes cut in half
- 2 Bell Peppers any color, chopped
- 1 medium Onion cut into wedges
- 1 cup Dry Red Wine
- 2 teaspoons Dried Oregano
- 1 teaspoon Smoked Paprika
- 1 medium Navel Orange
- ⅓ cup Sliced Green Olives
- ¼ cup Fresh Parsley chopped
Instructions
Brown the Meat
- Set pressure cooker to sauté setting. Add oil. Add beef and cook 5-7 minutes, or until browned. Remove from pot and set aside.
- Add broth to pot. Bring to a simmer, scraping up any browned bits from the bottom. Stir in the next seven ingredients through the paprika.
- Lock lid. Cook on HIGH pressure for 15 minutes
- Natural release for at least 15 minutes. Zest a few stips from the orange and squeeze 2 tablespoons of juice.
- Stir in orange juice, orange zest, olives, and parsley.
