Meaty beef stew with smoky flavors and plenty of veggies to keep you feeling content. A tasty stew, all cooked in one pot with the help of a pressure cooker.
Set pressure cooker to sauté setting. Add oil. Add beef and cook 5-7 minutes, or until browned. Remove from pot and set aside.
Add broth to pot. Bring to a simmer, scraping up any browned bits from the bottom. Stir in the next seven ingredients through the paprika.
Lock lid. Cook on HIGH pressure for 15 minutes
Natural release for at least 15 minutes. Zest a few stips from the orange and squeeze 2 tablespoons of juice.
Stir in orange juice, orange zest, olives, and parsley.
