
Pasta e Fagioli
Tonia BloomPasta e Fagioli is a simple Italian soup with veggies, beans, and a small pasta. This version uses some "shortcuts" for the cook, saving time in the kitchen and making a great meal prep dish.

Ingredients
- 8 ounces Ditalini Pasta
- 1 tablespoon Grapeseed Oil
- 1 (10-ounce) package Frozen Seasoning Blend
- ½ teaspoon Kosher Salt
- 1 teaspoon Italian Seasoning
- ¾ teaspoon Black Pepper
- 2 (16-ounce) cans Low Sodium Refried Beans
- 1 (48-ounce) box Low Sodium Chicken Broth
- 1 (14.5-ounce) can No Salt Added Petite Diced Tomatoes
- 1 (15.5-ounce) can No Salt Added Cannelini Beans drained and rinsed
Instructions
- Cook the Ditalini al dente as directed on the package without salt. Drain and set aside.
- Heat the oil in a large pot over medium-high heat. Add the frozen seasoning blend and cook for 2-3 minutes. Stir in salt, Italian seasoning, and pepper. Cook for 1-2 minutes, or until veggies are soft. Stir in refried beans, broth, and tomatoes. Bring to a boil, then reduce heat to simmer pot for 20 minutes. Stir in ditalini and cannellini beans. Cook 4-5 muntes, or until heated through.
Make ahead:
- Let soup cool, then package in 2-cup lidded containers. Label and refrigerate for up to 5 days.
Notes
Ingredient Notes:
- Frozen Seasoning Blend - A mix of celery, onions, carrots, and some brands add bell peppers and parsley. Kroger, Walmart, and PicSweet all have a "Seasoning Blend" product that will work.
- Low Sodium Refried Beans - Harder to find, but a couple of brands to look for are Amy's® Organic and Eden Foods®. Eden products are not marked as low sodium on the label but are much lower in sodium than most brands. If you can't find Amy's or Eden Foods, Ortega® is the next best choice.
- No Salt Added Cannelini Beans - Any small white bean can be used as a substitution. Eden® is the only brand I can find that is no salt added. Whole Foods® 365 Organic Cannellini Beans is low in Sodium and a good alternative.
