This is a simple side dish that is fancy enough for company. It goes well with fish, chicken, pork chops, and steak. The recipe is also easy to scale up or down.
Place carrots in a medium saucepan and just cover with water. Cook over medium-high heat for about 3 minutes after water comes to a boil. Add frozen peas and reduce heat to medium. Cook about 5 minutes, or until veggies are crisp tender. Remove veggies from pan and drain. Set aside.
In the same saucepan, melt butter and stir in mushrooms and green onions. Cook over medium heat about 5 minutes, or until mushrooms are tender. Stir in basil, salt, and pepper. Return carrots and peas to pan and heat through, stirring as needed.
