Ingredients
- 1 medium Carrot about 1/2 cup
- 1 (10-ounce) package Frozen Peas
- 1 (8-ounce) package Mushrooms sliced
- 2 Green Onions sliced diagonally in ½-inch pieces
- 1 tablespoon Butter with Oil
- ½ teaspoon Dried Basil Leaves or 1 tablespoon fresh
- ¼ teaspoon Kosher Salt
- ¼ teaspoon Black Pepper
Instructions
- Place carrots in a medium saucepan and just cover with water. Cook over medium-high heat for about 3 minutes after water comes to a boil. Add frozen peas and reduce heat to medium. Cook about 5 minutes, or until veggies are crisp tender. Remove veggies from pan and drain. Set aside.
- In the same saucepan, melt butter and stir in mushrooms and green onions. Cook over medium heat about 5 minutes, or until mushrooms are tender. Stir in basil, salt, and pepper. Return carrots and peas to pan and heat through, stirring as needed.
