Tarragon spice has a very strong and distinct flavor which can overwhelm some dishes. In this light salad dressing, we are using tarragon vinegar which still gives you that distinct flavor without overpowering the rest of the ingredients. Low heat oils are best for salad dressing so we chose Flaxseed Oil because it has a mild flavor, low in Saturated Fat, and high in Omega-3's.
You can use any combination of salad greens, but we like mixed greens often marketed as "Spring Mix" or "50/50" blends.
