Mixed Greens with Garlic-Tarragon Dressing

Tarragon spice has a very strong and distinct flavor which can overwhelm some dishes. In this light salad dressing, we are using tarragon vinegar which still gives you that distinct flavor without overpowering the rest of the ingredients. Low heat oils are best for salad dressing so we chose Flaxseed Oil because it has a mild flavor, low in Saturated Fat, and high in Omega-3's. You can use any combination of salad greens, but we like mixed greens often marketed as "Spring Mix" or "50/50" blends.

Ingredients
  

  • 1 clove Garlic minced
  • 1/8 tsp each salt and pepper
  • 1/8 tsp Dry Mustard
  • 1 tbsp Tarragon Vinegar
  • 1/4 cup Flaxseed Oil
  • 5 cups Mixed Salad Greens

Instructions
 

  • Dressing: In a small bowl or glass jar, combine garlic, dry mustard, and salt and pepper. Add vinegar and oil and blend well.
  • Assemble: In a large bowl, combine salad greens and dressing. Toss to coat. Divide evenly between 4 salad bowls and serve.
