A rich chicken noodle soup with a Latin America flavor base known as sofrito. This version of sofrito is tomato-based with sautéed onions and garlic. The Manzanillo seasoning we chose has a wonderful blend of flavors to include Ancho chilies, Pasilla chilies, black pepper, garlic, chipotle peppers, onion, coriander, Mexican oregano and cumin. There are several online companies that sell Manzanillo seasoning. Look for a Salt-Free version.
Place ingredients in a blender in this order: tomatoes, onion, garlic, cilantro, and Manzanillo seasoning. Puree in a blender until smooth.
Cook the Soup:
Heat the oil in a large pot over medium-high heat. Add the pasta and cook for 1 or 2 minutes; stirring constantly. Carefully add the tomato mixture to hot pot; cook and stir for 1 minute. Add broth, chicken, and salt. Bring to a boil. Reduce heat and cover pot. Simmer for 15 to 20 minutes.
Plate and Serve:
Divide soup evenly between 8 bowls. Garnish as desired.
