A rich chicken noodle soup with a Latin America flavor base known as sofrito. This version of sofrito is tomato-based with sautéed onions and garlic. The Manzanillo seasoning we chose has a wonderful blend of flavors to include Ancho chilies, Pasilla chilies, black pepper, garlic, chipotle peppers, onion, coriander, Mexican oregano and cumin. There are several online companies that sell Manzanillo seasoning. Look for a Salt-Free version.

Ingredients
  

  • 1 (28-ounce) can No Salt Added Diced Tomatoes
  • 1 cup Onion chopped
  • 6 cloves Garlic
  • ½ cup Cilantro chopped
  • teaspoons Salt-Free Manzanillo Seasoning
  • 2 tablespoons Avocado Oil
  • 5 ounces Whole Wheat Capellini broken into fourths
  • 6 cups Low Sodium Chicken Broth
  • pounds Boneless Skinless Chicken Breasts cut into 1-inch chunks
  • 1 teaspoon Kosher Salt
  • Avocado, Lime Wedges, or Cilantro for garnish

Instructions
 

Blend Tomato Mixture:

  • Place ingredients in a blender in this order: tomatoes, onion, garlic, cilantro, and Manzanillo seasoning. Puree in a blender until smooth.

Cook the Soup:

  • Heat the oil in a large pot over medium-high heat. Add the pasta and cook for 1 or 2 minutes; stirring constantly. Carefully add the tomato mixture to hot pot; cook and stir for 1 minute. Add broth, chicken, and salt. Bring to a boil. Reduce heat and cover pot. Simmer for 15 to 20 minutes.

Plate and Serve:

  • Divide soup evenly between 8 bowls. Garnish as desired.
