Sausage and veggie filled burritos made with egg substitute. The average large egg contains 215 grams of cholesterol; whereas an egg substitute has zero cholesterol. Look for Brands with 100% egg whites as the only ingredient.
Heat oil in a large nonstick skillet over medium heat. Add mushrooms, bell pepper, chili powder, salt and pepper. Cook and stir 3 minutes or until vegetables are tender. Stir in the sausage crumbles.Pour in egg substitute. Let egg mixture set around edge of skillet. Run a spatula around set edges, lifting mixture so uncooked portion can flow underneath. Continue process until egg is cooked through. Remove from heat. Cover to keep warm until ready to assemble wraps.
Assemble and Serve
Microwave tortillas on high for 30 seconds. Divide mixture evenly between 4 tortillas and top with chopped tomato. Wrap "burrito" style. Serve with hot sauce if desired.
Make-Ahead Instructions
Cook the Veggies and Eggs as directed above. Let mixture cool. Store in airtight container in fridge for up to 5 days.Reheat Single Serving: Microwave approximately ¾-cup of egg mixture for 1 minute on high. Microwave tortilla for 10 seconds on high. Roll heated egg mixture in warmed tortilla and serve.
