Ingredients

  • 1 tablespoon Grapeseed Oil
  • 1 cup Fully Cooked Turkey Sausage Crumbles
  • 1 cup Mushrooms chopped
  • ½ cup Green Bell Pepper chopped
  • ¼ teaspoon Salt Free Chili Powder
  • teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper
  • 1 cup Liquid Egg Substitute
  • 4 Low Carb Flour Tortillas soft taco (42g each)
  • 1 Tomato chopped

Instructions

Cook the Veggies and Eggs

  • Heat oil in a large nonstick skillet over medium heat. Add mushrooms, bell pepper, chili powder, salt and pepper. Cook and stir 3 minutes or until vegetables are tender. Stir in the sausage crumbles.
Pour in egg substitute. Let egg mixture set around edge of skillet. Run a spatula around set edges, lifting mixture so uncooked portion can flow underneath. Continue process until egg is cooked through. Remove from heat. Cover to keep warm until ready to assemble wraps.

Assemble and Serve

  • Microwave tortillas on high for 30 seconds. Divide mixture evenly between 4 tortillas and top with chopped tomato. Wrap "burrito" style. Serve with hot sauce if desired.

Make-Ahead Instructions

  • Cook the Veggies and Eggs as directed above. Let mixture cool. Store in airtight container in fridge for up to 5 days.
Reheat Single Serving: Microwave approximately ¾-cup of egg mixture for 1 minute on high. Microwave tortilla for 10 seconds on high. Roll heated egg mixture in warmed tortilla and serve.

  1. Flawed. 1st, the point at which the turkey sausage is incorporated is not mentioned; 2nd, the amount of oil is not specified. Having tried it, I think about 1 tablespoon canola is sufficient, and I would add the sausage at the same time as the vegetables. Flavor not bad, but some Chula hot sauce improved it markedly. The addition of a few slices of avocado would be nice as well.

    1. Robert, thanks for catching those errors. The amount of oil is 1 tablespoon and the sausage crumbles are stirred into the cooked veggies. Recipe has been updated. And, I most definitely agree with adding hot sauce to any burrito : )
