What says Italian like Capicola ham, pesto, red peppers, and mozzarella cheese melted into a delicious sandwich? It all comes together pretty quick when you roast the red peppers in a toaster oven and grill the sandwiches on a griddle pan.
Broil bell pepper for about 5 minutes or until slightly charred and soft. Cut each half in half, so you have four sections.
Spread pesto on one side of each bread slice. Top each bottom half with 1 slice of mozzarella, 1 ounce of ham, and one section of roasted bell pepper. Top with other half of bread, pesto side down.
Heat a non-stick griddle pan over medium heat. Spray pan lightly with grapeseed oil. Add sandwiches and cook until golden brown on each side and cheese is melted, about 3 minutes per side. (Cook sandwiches in 2 batches if needed).
Notes
To Reheat sandwiches: Wrap in foil and warm in a 300°F oven for 15-20 minutes.
