
Italian Grilled Cheese Sandwiches
Tonia BloomWhat says Italian like Capicola ham, pesto, red peppers, and mozzarella cheese melted into a delicious sandwich? It all comes together pretty quick when you roast the red peppers in a toaster oven and grill the sandwiches on a griddle pan.

Ingredients
- 8 slices Italian Bread such as Pepperidge Farm®
- 8 tablespoons Basil Pesto
- 4 slices Low Moisture Mozzarella Cheese
- 4 ounces Capicola Ham
- 1 large Red Bell Pepper cut in half
- Grapeseed Oil
Instructions
- Broil bell pepper for about 5 minutes or until slightly charred and soft. Cut each half in half, so you have four sections.
- Spread pesto on one side of each bread slice. Top each bottom half with 1 slice of mozzarella, 1 ounce of ham, and one section of roasted bell pepper. Top with other half of bread, pesto side down.
- Heat a non-stick griddle pan over medium heat. Spray pan lightly with grapeseed oil. Add sandwiches and cook until golden brown on each side and cheese is melted, about 3 minutes per side. (Cook sandwiches in 2 batches if needed).
Notes
To Reheat sandwiches: Wrap in foil and warm in a 300°F oven for 15-20 minutes.
