Cheesy hash brown potatoes with diced ham is what makes this a breakfast favorite. No special ingredients and super easy to make. Any "cream of" soup will work.
Preheat oven to 400°F. Lightly spray 13 x 9 inch baking dish with cooking spray. Set aside.
In a large mixing bowl, combine potatoes, ham, soup, and pepper. Pour mixture into prepared baking dish. Bake, uncovered for 25 minutes. Top with cheeses and cook another 5-10 minutes or until cheese is melted. Remove from oven and cool for at least 10 minutes.
