You can choose any chicken sausage for this quick and easy weeknight dinner. Flavors that work well with the herbed vinaigrette are Aidells® Chicken & Apple or Italian Style, Johnsonville® Chicken Apple, or any other brand that has apple or Italian flavors.
Toss the peppers, onions, half of the garlic and fennel seeds with 1 tablespoon oil in a large bowl.
Preheat the grill or griddle to medium high. Oil the surface if not seasoned. Cook the peppers and onions on one side and the sausage on the other side. Turn veggies and sausage occasionally for about 8-12 minutes, or until slightly charred. Remove sausage to a cutting board and slice as desired. Transfer veggies to a large bowl.
Whisk the remaining 1 tablespoon oil and garlic with parsley tarragon, vinegar, and salt in a small bowl. Pour over veggies and toss to coat.
One sausage link and about 1 cup of veggies equals a serving. Garnish with green onions and serve.
