What could be easier than wrapping your favorite fish and veggies in foil? Make the packets ahead and freeze for a quick dinner or camping trip. Any white fish works well including tilapia, cod, and haddock.
Tear off 4 pieces of heavy duty foil about 12" X 18"In a small bowl, mix together melted buttery spread, olive oil, and lemon juice.For each piece of foil: Start with fish, top with veggies, oil mixture and seasonings. Fold up lengthwise with double fold, then fold up short sides with double fold. Place foil packets in a gallon sized freezer bag. Date and label. Freeze for up to 3 months
Thaw and Cook:
Thaw the foil packages overnight in the refrigerator.Prepare grill to cook for medium heat. Grill, covered for 15-20 minutes, or until veggies are tender and fish flakes easily with a fork.
