An Asian inspired marinade with rice vinegar, soy sauce, honey, and sesame oil. Marinate overnight then bake in the oven for about 20 minutes. Recipe also works well as a freezer dish.
Tenderize the chicken with a meat tenderizer with metal blades. Place chicken in a gallon-sized freezer bag.
In a 2 cup glass measuring cup, stir together avocado oil, vinegar, soy sauce, honey, sesame oil, and pepper. Pour marinade into freezer bag with chicken. Seal bag. Place the bag in fridge (lay flat) overnight. Flip at least once.
Bake the Chicken:
Preheat oven to 400°F. Line a baking sheet with foil.
Remove chicken from marinade and place on prepared baking sheet. Discard Marinade. Bake in preheated oven for 20-25 minutes or until firm to the touch. Remove from oven and let rest for 10 minutes.
Plate and Serve:
Slice chicken and divide evenly between six plates. Garnish with sesame seeds.
Freeze for Later:
Marinate the chicken as directed. Place freezer bag in freezer for up to 5 months. When ready to cook, thaw in refrigerator and cook as directed above.
