Make the Celery-Slaw: Whisk together sour cream, mayonnaise, and vinegar in a bowl. Add celery, green onion, parsley, and cheese. Toss to coat.
Shape the turkey into 4 patties, about ¾-inch thick. Grill 7-8 minutes per side over medium to low heat. Remove from the grill and baste with buffalo sauce.
Serve burgers on buns with sliced tomato and Blue Cheese-Celery Slaw.
