A hearty slow cooked chili with a little bit of heat. We topped ours with Colby Cheese and Sour Cream. Both are included in the Nutrition Facts. Serve with corn muffins for comfort meal favorite.

Cook the Chili
Heat oil and onions in a Dutch Oven over medium-high heat. Saute the onions for 3 minutes. Add ground beef and cook for about 10 minutes, or until beef is browned. Break up meat with wooden spoon as it cooks.Add garlic, chili powder, cumin, black pepper, chipotle pepper, cayenne pepper, oregano, and sugar. Cook and stir for 2 minutes.Stir in the bell peppers, tomato sauce, tomato paste, and water. Bring mixture to a simmer. Simmer uncovered for 60 minutes; stirring as needed.Stir in the beans and simmer 30 minutes.
Make into Meal Prep Meals
Remove the chili from heat and let cool to almost room temperature.Divide the chili evenly between eight 2-cup airtight containers. Seal. Label with date and contents. Refrigerate for up to 5 days. Freeze for up to 3 months.When ready to eat:Thaw if frozen. Reheat in microwave. Sprinkle with 1 tablespoon cheese and 1 tablespoon sour cream.
