Meatloaf cooked in a crockpot is the best. The meat stays juice, not greasy and the homemade BBQ sauce is delicious. Top it off with melted cheese and this is now a family favorite
Cut two 18x6-inch strips of heavy-duty foil. Fold each sheet in half lengthwise. Place strips in bottom and up sides of cooker crisscross so them resemble an X. Coat strips with cooking spray.
In a large bowl, lightly beat eggs and combine with oats, bell pepper, onion, dry soup mix, garlic, salt, and pepper. Add the beef, breaking it up lightly with your hands. Gently incorporate the meat into other ingredients until it holds together. Shape into a 7-inch loaf. Place loaf in the middle of the foil strips. Cover and cook on LOW for 3-4 hours. Internal temperature should read 160℉
In a small bowl, mix ketchup, brown sugar, BBQ seasoning, and mustard. Pour over the meatloaf and top with cheese. Cook covered on LOW for 15 minutes, or until cheese is melted.
Use the foil strips as "handles" to lift the loaf onto a platter. Let it rest for 5 minutes, then cut into 8 slices.
