Turkey Pesto Sandwiches
Tonia BloomI love turkey sandwiches and that's my lunch most of the time. You know, sliced deli turkey (low sodium, of course) lettuce, tomato, and a high fiber bread. For a change of pace, try this version when you want to eat out, but you know the "sandwich shop" may not be the best choice.

Ingredients
- ¼ cup Mayonnaise
- 1½ tablespoons Basil Pesto
- 1 teaspoon Lemon Juice
- ½ teaspoon Dried Oregano
- ⅛ teaspoon Black Pepper
- 4 rolls French Rolls (45g) cut in half lengthwise
- 6 ounces Low Sodium Deli Turkey sliced
- 1 large Tomato sliced
- 2 slices Low Moisture Mozzarella Cheese cut in half
Instructions
- Lightly toast cut rolls about 5 minutes. Remove to assembly board.
- Mix mayonnaise, pesto, lemon juice, oregano, and pepper in a small bowl. Spread the mixture evenly between the toasted rolls.
- Layer the turkey, tomato, spinach, and mozzarella cheese on top of rolls.
- Place sandwiches on a baking sheet and broil for 2-3 minutes, or until cheese is melty.
