A comfort food favorite made in one pot is so easy and delicious. We used applewood smoked bacon to get even more flavor, but you can use any thick cut bacon. Gouda cheese is sweet, creamy, and melts perfectly for cheese sauces.

Ingredients
  

  • 2 slices Thick Cut Bacon
  • 2 tablespoons All Purpose Flour
  • 2 cups 2% Milk warmed
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Dry Mustard
  • ¼ teaspoon Hot Sauce
  • ¼ teaspoon Worcestershire Sauce
  • 4 ounces Reduced Fat Cheddar Cheese shredded
  • 4 ounces Smoked Gouda Cheese shredded
  • 12 ounces Elbow Macaroni

Instructions
 

  • Cook macaroni al dente as directed on package without salt. Drain and set aside.
  • In a large cast iron skillet (or heavy nonstick skillet), cook bacon over medium heat until crisp. Remove bacon with a slotted spoon and drain on paper towel lined plate. Leave drippings in skillet. Crumble cooled bacon and set aside.
  • Whisk flour into drippings. Cook over medium heat, stirring constantly, for 1-2 minutes. Gradually whisk in warm milk, salt, dry mustard, hot sauce, and Worcestershire sauce. Bring to a low boil. Cook and whisk frequently for 15 minutes, or until thickened. Remove sauce from heat. Stir in cheeses until melted. Stir in bacon and cooked macaroni.
  • Divide evenly between 8 bowls and garnish with chopped chives or parsley.
