Ingredients
- 1½ pounds Rainbow Carrots cut in half
- 4 cloves Garlic cut in half
- 3 Shallots cut in quarters
- ¼ cup Grapeseed Oil
- 2 teaspoons Kosher Salt
- 2 teaspoons Ground Black Pepper
- ½ teaspoon Dried Thyme
Instructions
- Preheat oven to 375°F. Line a large rimmed baking sheet with foil.
- On prepared baking sheet, toss together all ingredients and spread out in a single layer.
- Bake until carrots are tender, about 20-25 minutes.
