
Philly Cheesestake Quesadillas
Tonia BloomAll the goodness of a Philly Cheesestake Sandwich, but in a quesadilla. Thin slices of roast beef are sauteéd with strips of onion and bell pepper, and don't forget the cheese. Our homemade cheese sauce is less sodium than Velveeta® or any store-bought jar. The recipe is a Master Mix for the freezer that comes in handy when you want a cheese sauce.

Ingredients
- 1 container Freezer White Cheddar Cheese Sauce thawed
- ½ teaspoon Black Pepper
- 1/4 teaspoon Cayenne Pepper
- 1 medium Onion sliced thick
- ½ medium Red Bell Pepper sliced thick
- 8 ounces Low Sodium Deli Roast Beef thin sliced
- 4 8-inch Low Carb Flour Tortillas - Taco (42g)
- Avocado Oil Cooking Spray
Instructions
- Measure 1 cup of cheese sauce into a small bowl. Stir in black pepper and cayenne pepper. Set aside. NOTE: There will be about ⅓ cup of cheese sauce leftover. Use this extra sauce for a quick snack dip with celery or baby carrots.
- Coat a large nonstick skillet with Cooking Spray. Heat pan to medium-high heat and add onions and bell pepper. Cook for about 5 minutes, stirring as needed until veggies are tender. Add roast beef and cook another 1-2 minutes, or until the meat is hot and slightly browned. Remove from heat.
- Heat a flat-top grill (or nonstick griddle pan) between medium-high and high heat. Coat with Cooking Spray. Place one tortilla on the griddle and top with half the meat mixture and half the cheese sauce. Place another tortilla on top and press down slightly. Cook for 3-6 minutes, or until the bottom tortilla is browned. Flip the tortilla and cook the other side for another 3-6 minutes. Repeat the process with the remaining tortillas, meat, and cheese. NOTE: Cooking time will fluctuate depending on what appliance you are using. Quesadilla is done when tortillas are browned and the cheese is melty.
- Place cooked quesadillas on a cutting board and slice into 4 wedges. Serving size is half of a quesadilla or 2 wedges.
