Ingredients
  

  • 4 ounces Rotini Pasta
  • 6 ounces Fresh Green Beans cut in 2-inch pieces
  • 4 cups Water
  • 2 tablespoons Extra Virgin Olive Oil divided
  • 2 ounces Baby Spinach
  • ½ cup Red Onion chopped
  • 12 pitted Kalamata Olives chopped
  • 3 ounces Reduced Fat Feta Cheese Crumbles
  • tablespoons Cider Vinegar
  • 1 teaspoon Dried Oregano
  • teaspoon Crushed Red Pepper

Instructions
 

  • Combine water, pasta, green beans, and 1 teaspoon oil in pot. Make sure pasta is submerged in the water. Seal lid and close valve. Cook on high pressure for 3 minutes. Quick release pressure. Drain and rinse in cold water. Allow to cool and drain until ready to assemble salad.
    Meanwhile, combine remaining ingredients in a large bowl. Add cooled pasta and green bean mixture. Toss until well blended.

Make Ahead:

  • Package pasta salad in (4) 2-cup containers. Refrigerate for up to 5 days.
