Ingredients
- 4 ounces Rotini Pasta
- 6 ounces Fresh Green Beans cut in 2-inch pieces
- 4 cups Water
- 2 tablespoons Extra Virgin Olive Oil divided
- 2 ounces Baby Spinach
- ½ cup Red Onion chopped
- 12 pitted Kalamata Olives chopped
- 3 ounces Reduced Fat Feta Cheese Crumbles
- 1½ tablespoons Cider Vinegar
- 1 teaspoon Dried Oregano
- ⅛ teaspoon Crushed Red Pepper
Instructions
- Combine water, pasta, green beans, and 1 teaspoon oil in pot. Make sure pasta is submerged in the water. Seal lid and close valve. Cook on high pressure for 3 minutes. Quick release pressure. Drain and rinse in cold water. Allow to cool and drain until ready to assemble salad.Meanwhile, combine remaining ingredients in a large bowl. Add cooled pasta and green bean mixture. Toss until well blended.
Make Ahead:
- Package pasta salad in (4) 2-cup containers. Refrigerate for up to 5 days.
