

Healthier Turkey Enchiladas
Tonia BloomEven though these turkey enchiladas are "healthier", they are still delicious and cheesy. We chose Oaxaca cheese, which is a semi hard cheese that is similar to Monterey Jack, but melts like mozzarella cheese. It has a mild flavor and goes perfect with the ground turkey and green enchilada sauce.

Ingredients
- 2 teaspoon Avocado Oil
- 1 pound Ground Turkey
- ½ cup Onion chopped
- 1½ teaspoons Ground Cumin
- ¼ teaspoon Chipotle Chili Powder
- 1 (8-ounce) package Oaxaca Cheese shredded
- 2 (10-ounce) cans Green Chile Enchilada Sauce such as Old El Paso®
- 16 (6-inch) Corn Tortillas
- 2 tablespoons Raw Pepitas (pumpkin seeds) coarsely chopped
- ⅓ cup Cilantro chopped
- 2 tablespoons Green Onions sliced
Instructions
- Preheat oven to 350°F. Lightly spray 9x13-inch baking pan with avocado oil.
- Heat oil in a large nonstick skillet over medium-high heat. Add ground turkey and onion. Cook and stir about 5 minutes, or until meat is no longer pink and onion is tender. Stir in cumin and chipotle chili powder. Remove from heat and let cool slightly.
- Spread ¼ cup of enchilada sauce in bottom of prepared baking pan. Warm tortillas and fill each with about ¼ cup of meat and ¼ cup cheese. Roll and place seam side down in baking pan. Top with remaining enchilada sauce and cheese.
- Bake in preheated oven for 20 minutes, or until bubbly and cheese is melted. Remove from oven and garnish with pepitas, cilantro, and green onions.
Notes
Pico de Gallo Salad –
Stir together 2 cups chopped tomatoes, 2 cups chopped onion, 2 jalapenos seeded and chopped. Divide 8 cups of shredded lettuce between eight plates. Top with about ½-cup of the Pico de Gallo per plate.
