Glazed Carrots with Bourbon

Ingredients
- 3 cups Water
- 1½ pounds Baby Carrots
- 1 tablespoon Sugar
- 2 tablespoons Unsalted Butter
- 3 tablespoons Light Brown Sugar packed
- 2 tablespoons Bourbon optional
Instructions
- Bring the water to a boil in a 3-quart saucepan. Add carrots and sugar. Return to a boil and cook for 5 minutes.Meanwhile, melt the butter and brown sugar in a large skillet over medium-high heat. Stir in the cooked carrots. Cook for 3 - 5 minutes, or until carrots are fork tender. Add the bourbon (if desired) and cook for 3 more minutes.
