Garden Salad with Homemade Balsamic Vinaigrette

The salad is a refreshing combination of spring mix lettuce, yellow bell peppers, grape tomatoes, cucumber, radishes, and red onion. The homemade dressing is easy to make, but you can substitute Brianna's® Avocado Oil Dressing Classic Balsamic Vinaigrette. Just add 1 gram of Saturated Fat to the recipe's Nutritional Information. The rest of the nutrition facts are about the same.

Ingredients
  

  • 1 (16-ounce) container Spring Mix Lettuce
  • 1 medium Yellow Bell Pepper sliced thin
  • 1 cup (about 6-ounces) Grape or Cherry Tomatoes cut in half
  • 6 ounces (12 slices) English Cucumber sliced
  • 3 ounces Radishes sliced thin
  • ½ medium Red Onion sliced thin

Balsamic Vinaigrette:

  • ½ cup Balsamic Vinegar
  • 2 tablespoons Dark Brown Sugar firmly packed
  • 2 tablespoons Stone Ground Mustard
  • ½ teaspoon Garlic Salt
  • ¼ teaspoon Black Pepper
  • ½ cup Olive Oil

Instructions
 

Make the Balsamic Vinaigrette:

  • In a small bowl, whisk together vinegar, brown sugar, mustard, garlic salt, and pepper until sugar is dissolved. Slowly whisk in the oil until well combined. Cover and refrigerate until ready to serve.
    Note: Dressing can be made ahead and stored in a mason jar, or other airtight container. Refrigerate for up to 5 days.

For the Salad:

  • Divide the spring mix evenly between six salad bowls. Top each bowl with bell pepper, tomatoes, 2 slices of cucumber, radishes, and red onion.
  • Serve the dressing on the side. Divide the Balsamic Vinaigrette into six condiment containers. Each serving is about 3 tablespoons.
