Freezer Cheddar Cheese Sauce Master Mix
Tonia BloomOriginal recipe adapted from Make-A-Mix Cookbook. Make this simple cheese sauce ahead as a freezer staple for topping vegetables, eggs, or anything else you want. When you want a quick cheese sauce, just microwave for 2-3 minutes at 50% power.

Ingredients
- 3/4 cup All Purpose Flour
- 1 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Ground Nutmeg
- 3/4 cup Unsalted Butter
- 4 cups 2% Milk
- 2 cups Low Sodium Chicken Broth
- 1 cup Half and Half
- 4 Egg Yolks
- 12 ounces Sharp Cheddar Cheese shredded
Instructions
Make the Cheese Sauce
- In a small bowl, combine flour, salt, and nutmeg. Set aside. In a medium bowl, beat egg yolks. Stir in half and half until blended. Set aside.
- Melt butter in a large, heavy saucepan over medium heat. Add flour mixture. Whisk for 2 minutes. Gradually add milk and broth, whisking until smooth. Cook and stir for 2-4 minutes or until slightly thickened. Remove from heat.
- Pour about half of the hot sauce into egg and cream mixture and blend well. Add mixture to saucepan. Cook and stir for another 2-3 minutes; do not boil. Remove from heat. Stir in cheese until melted. Cool to room temperature.
Package and Freeze
- Divide sauce between six 2-cup freezer safe containers. Label containers with date and contents. Refrigerate for a couple hours and then move to the freezer.Makes about 8 cups sauce.Freeze for up to 6 months.
