Ingredients
- 1½ pounds Boneless Skinless Chicken Breasts cut into 4-ounce pieces
- 1 cup Low Sugar Orange Juice
- 1 cup Low Sodium Chicken Broth
- 2 Limes juiced
- 2 teaspoons Minced Garlic (jar)
- ½ cup Cilantro chopped
- 1 (15-ounce) can No Salt Added Black Beans rinsed and drained
- 1 tablespoon Ground Cumin
Salad Ingredients:
- 12 cups Romaine Lettuce chopped
- 1 cup Tomato chopped
- ½ cup Onion chopped
- ½ cup Cilantro chopped
- ¾ cup Queso Fresco or Cotija Cheese crumbled
Instructions
- Combine all chicken ingredients and cook in either a slow cooker or pressure cooker.
Cook the Chicken in a Slow Cooker:
- Cook on Low for 6 hours, or High for 3-4 hours.Remove chicken from slow cooker and shred. Place back in slow cooker to soak up the juices. When ready to serve, remove chicken with a slotted spoon and allow to drain a bit.
Cook the Chicken in an Instant Pot:
- Cook on High pressure for 10 minutes. Allow for natural release.Remove chicken from pot and shred. Place back in pot to soak up juices. When ready to serve, remove chicken with a slotted spoon and allow to drain a bit.
Assemble and Serve:
- Divide romaine evenly between 6 bowls. Top with shredded chicken, tomato, onion, cilantro, and cheese.
