Ingredients
  

  • 2 cups Jasmine Rice
  • 1 cup Light Coconut Milk
  • 1 cup Peach Mango Jalapeno Salsa such as Pace®
  • cups Water

Instructions
 

Cook the Rice:

  • Heat the rice, coconut milk, and water in a 2-quart saucepan over medium-high heat. Bring to a boil. Reduce heat to low and simmer for 15 minutes or until rice is tender.

Plate and Serve:

  • Stir in the salsa. Divide rice evenly between 8 plates and serve hot.
    1 serving is about ¾ cup.
