Caribbean Rice

Ingredients
- 2 cups Jasmine Rice
- 1 cup Light Coconut Milk
- 1 cup Peach Mango Jalapeno Salsa such as Pace®
- 1½ cups Water
Instructions
Cook the Rice:
- Heat the rice, coconut milk, and water in a 2-quart saucepan over medium-high heat. Bring to a boil. Reduce heat to low and simmer for 15 minutes or until rice is tender.
Plate and Serve:
- Stir in the salsa. Divide rice evenly between 8 plates and serve hot.1 serving is about ¾ cup.
