Frittatas are my favorite "go-to" breakfast because they are delicious and can be made ahead for a quick and easy breakfast.

Ingredients
  

  • 4 slices Thick Cut Bacon
  • 6 large Eggs
  • 1 cup 2% Milk
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper
  • 1 cup Reduced Fat Cheddar Cheese shredded
  • ¼ cup Green Onions chopped

Instructions
 

  • Preheat oven to 350°F.
  • Cook bacon in a large nonstick, oven-safe skillet over medium-high heat until crispy, about 10 minutes. Drain bacon on paper towels, then crumble.  Discard excess grease in skillet.
  • Whisk eggs, milk, salt and pepper in a bowl. Pour into skillet.   Sprinkle with bacon, cheese, and green onion.
  • Bake for 25-30 minutes, or until center is set.
  • Let frittata cool at least 10 minutes before cutting into 6 wedges.
