Almost Fat-Free Apricot Tortoni
Tonia BloomTortoni is an Italian frozen dessert named after the owner of a Paris Cafe that first opened in 1798. The dessert is usually made with crumbled cookies, ice cream, and a flavored extract or liqueur. Our version is super easy to make with only 5 ingredients. Reduced Fat wafers and Fat-Free frozen yogurt make this into an almost fat-free treat that is also low in sodium.

Ingredients
- 12 Reduced Fat Vanilla Wafers
- 1 pint Fat Free Frozen Vanilla Yogurt
- 1 (10-ounce) jar Apricot Preserves
- 1 tsp Almond Extract
- 1 (2.25-ounce) package Sliced Almonds
- 12 Paper Baking Cups
Instructions
- Place paper baking cups in a muffin tin. Place one wafer cookie in each cup and set aside.
- Combine softened yogurt, apricot preserves, and almond extract; mix well. Spoon mixture evenly between the muffin cups. Sprinkle with sliced almonds. Cover and freeze for 8 hours.
