Open faced 10-Minute Brunch Sandwiches.

Ingredients for Brunch Sandwiches

  • English Muffins – Choose any whole grain you like.  We used Thomas’® Multi-Grain with 8 grams of Fiber.
  • Low Sodium Deli Ham – Choose the lowest sodium you can find.
  • Dijon Mustard – Any mustard you like will work just fine.
  • Large Eggs – fried or poached work best so you get that runny yolk to soak into the English muffin.
  • Swiss Cheese – choose regular thickness, high quality cheese for the best melting results.
Brunch Sandwiches with an english muffin topped with deli ham, fried egg, swiss cheese and broiled just enough to melt the cheese.

Top half of an English muffin with your favorite mustard, deli ham, a poached or fried egg, and swiss cheese. Broil just till the cheese melts and you have a yummy breakfast thats elegant enough for company.
These are quick breakfast sandwiches that are easy to scale for two or more servings.

Ingredients
  

  • 4 Multi-Grain English Muffins such as Thomas'®, split and lightly toasted
  • 8 ounces Reduced Sodium Deli Ham thin sliced
  • 8 teaspoons Dijon Mustard
  • 8 large Eggs fried or poached
  • 8 slices Swiss Cheese

Instructions
 

  • Top each muffin half with 1-ounce of ham. Spread 1 teaspoon mustard on top of ham. Top with one egg and a slice of cheese.
  • Transfer to a baking sheet lined with foil. Broil 4-5 inches from heat for 2-3 minutes, or until cheese is melted.
